What temperature sensor controls the fan. There is a sensor on the radiator and one on the block?

I have two different set ups. On my 76 chevy pickup I used a toggle switch which is routed through the temp senson on the block. On my 69 bronco with a 302 I used the fuse block provided with the electric fan kit and wired from my ignition. On the pu I turn on the toggle when I note the temp in about 190 However, on the bronco the thermostat opens at 180 and then the fan turns on at 200 via the thermostat and the fuse box.

Those were the good old days.
