I’m not sure what my problem is..plugs? cops? maf?, but I could sure use some member advice!! Every so often at from about 38 to 42 miles per hour
my ‘04 feels like it’s about to stall. The gas pedal stops responding when I depress the pedal (as if the car’s out of gas) and seconds later kicks back in!
Not a hard kick but very unnerving..seems to be happening more & more often lately. Any thoughts, please?

Thank you so much @biddle! I’ll try the MAF cleaner asap and ask my mechanic about the TPS. Some other Forum members who responded have suggested replacing the Cops and spark plugs for sale on Amazon.
Before you start throwing parts at the car, you need to check for pending codes, etc. Are any check engine or warning lights on? You can inspect the spark plugs as well.

The COPS thread is here. Read what it says on page one about what causes the coils & plugs to fail.

Check codes and pending codes with OBDII reader and reply with them.
MAF pretty easy to eliminate by carefully cleaning with MAF Cleaner, which I actually do for of all my automobile's maintenance.
Could also be related to the TPS Throttle position sensor.

Check codes.
Bought my coils and plugs on Ebay...replacement was pretty difficult and took over 2 hrs with the correct tools! And of course my son whose a licensed technician...
