Help Over heating issue

First posting, I hope you guys can help.

My wife's pride and joy and self selected retirement present to herself is an 04 She loves her car.

Our problem is the car will run fine when the AC is off. The temp needle stays dead center on the guage no matter how hot it is outside or how hard she may be running it. But turn the AC on when you really need it on warm days, 90 degree plus, and within minutes the guage starts to climb. I've had to turn the AC off and turn the heat on which drops the temp immediately. We have changed the thermostat, replaced thermostat housings, checked all hoses, checked antifreeze levels etc. The local dealer has tried to find the problem but no luck. So anyone got an idea where to look from here?

Does the fan come on when you activate the A/C?

Does the same overheat problem occur when you run the defroster? (Above 50 deg F the A/C is supose to activate when the defroster is used).
