Power Steering fluid capacity 2002

I am in the process of changing both the Power Steering Fluid and the Hydraulic Fan Fluid in my 2002 .
I have drained both reservoirs down to the intake connectors and disattached the hose which I plan to use to siphon out the old fluid.
Does anyone know approximately how much fluid I should use to purge and replace both in the Power Steering and Hydraulic fan reservoirs?

Also should I turn the steering wheel to the left and to the right several times during the process to get as much of the old fluid out as possible or is this a trivial amount not to worry about
