So, I finally got my triple black 03 and am enjoying it tremendously but I am still wondering what the black accent package upgrade replaced.

What would the top of the steering wheel and the shifter look like if I hadn't upgraded it to "black plastic"?

Just for the record, it is not plastic.

The steering wheel insert and shift knob are made of wood
 
Yes the shifter and the top of the steering wheel are wood that is black with a lacquered type finish. It looks great but only replaces what otherwise would be "black ink" leather. It's a personal preference. For the $295 cost the standard leather works for me.
