I am trying to determine how to tighten the two slide latches that are the connection points for the Convertible top and hardtop. anyone have information on this adjustment and how to access? these are Latch Plates T50501AK

I assume you have a shop manual. That way you know what Ford said and not hearsay. There is also a trim and sealer manual and several other pertinent manuals. That said I suggest you take a close look at those side hooks. The side latches and the front latches are threaded for tension adjustment. You may or may not notice an allen screw to set rotation of the latch. It is not really necessary in use because the latch does not revolve when cam locked in place.
 
It’s actually the female plates that are loose on the body of the car near the doors which are the issue those are loose. Don’t have a Manuel at the present time just received the car.

These latches have 3 x bolts to hold each on to the body, you need to remove the rear trim on side panel and with a socket reach under to tighten the bolts.
