What is an oil filter adapter switch?
What does it do? Or switch on/off?

Yep dumb questions but I'm trying to learn something here.

It's the body that your oil filter screws into and on the side of it it has two switches that control the flow of oil in and out. Ford has discontinued making this part.
 
Do you have a part number? I see the oil filter adapter, which is also the engine oil cooler, but no “switches.” Maybe the “switches” are a thermostatic valve for the coolant or oil flow in the cooler. See here for what a search for an adapter turned up at a Ford dealer. It’s a Lincoln LS part, but that’s fine since the LS and Jaguar S Type used the same platform as the T-Bird.
