concours sells the heat riser valve with and without the internal baffle. I don't drive my bird in cold weather. How important is the baffle in the operation of the thermostatic choke .

It will take the engine a little longer to reach full opperating temp is all.
 
None of us drive our classics in weather that the heat riser is going to matter and on the plus side your intake manifold paint won’t burn off in the middle.
 
I use what is essentially a spacer that goes in place of the heat riser valve. replaced ours 20 years ago without any problems. It is not uncommon for the heat riser valve to be stuck closed which is not useful. One could just cut out the flapper and be done with it. I live in Northern California and really don't need the heat riser. Unless you are going to drive regularly in cold weather it is likely not needed.
 
Ditto, here in New England
Choke still warms fairly quickly and kicks down idle.
