Can someone please identify these two electrical gizmos that are mounted behind the dash next to the hole for the speedo cable. I'm guessing relays or circuit breakers, but I can't find them in my manuals. I have a power seat, but no power windows if that matters.

The circuit breakers that are mounted under the dash are used for both the power windows and the power seats. If you do not have power windows then you will have less wires connected to the circuit breakers. Looking at the attached picture of the circuit breakers that are mounted under my dash, you will see that since my 1955 Thunderbird has both power windows and power seats there are more wires attached to them.

I have to ask, even though my 56 has manual seat and windows, so not a concern for me, but...

How do you reset these circuit breakers if they trip?

I'm pretty sure they self reset. Just interrupt the circuit when hot and reset when cooled. Not an expert but would make sense buried like that. Never had to worry about it thank heavens but I do have power windows but not the power seat. Didn't even know they were there and I thought I knew my car pretty well after almost 50yrs with it.

Ok, helpful, thanks. Since I have power seat and manual windows is it correct that I will need to wire only one circuit breaker?

There is a 5v intermittant voltage regulator that looks much like the circuit breakers. If the gas gauge and water temperature gauge suddenly or alredy have gone to appear empty fuel and over heating. The most likely cause is that the instrument voltage regulator has failed.
