Should paint or powdercoating be left off/removed on mating surfaces such as the gasket areas on the rear brake backing plates and front backing plates where they contact the spindle? I'm hoping that the coating thickness will not interfere with the assembly or cause other problems.

Hi nope not usually a problem to have it coated over mating surfaces in the brake part areas. Obviously on calipers with sliding surfaces I would clean the coating off as this could cause a drag.
