1966 Holley 4160 Carb setup

I have 66 & just got a holley 4160 600cfm 0-80457S Carb used. Should I have just went with a new one? I also have the Holley Marine Carb on the car now but I had issues so going with the new one. From what iv read going with a Holley Performance Heat Shield 108-70 ($60) + 1/2 inch Spacer (don’t know which exactly)
Then there’s the Braided Fuel Line w/ Guage. I’m just super confused and overloaded with options so any help would be greatly appreciated. I’m willing to put 1-2k right now and have shop where I can do all the work myself but It will be using videos & shop Manuel. Considering Suspension rebuild kit, brake conversion. So if you have any advice for me at all i sure would appreciate, I won’t ever be getting rid of car also but still in my 20’s

Choke either didn’t work or just wasn’t hooked up. If I manually opened choke and spray a little starter fluid it would start and I’d just close choke and it would run fine and then one day I pull out onto road and Stalls out in the middle of the road where the curb is too high so I’m rushing to open choke and spray a little starter fluid and a cop happened to behind me and finally I figure out it will now sit and idle but as soon as put in gear it stalls and I got it revved up before dropping into drive and with the cop behind me burn out and he was just about to have it towed so I just kept hammering it to keep from stalling and somehow hit all 4 green light between town and my house. I was just gonna find mechanic i could trust but since my father has taken carb off and jacked with it so i guess it’s possible that it isnt like everything else he’s ever tried to “fix” but I’m not confident. I also have this Summit Racing Carb I included pictures from video so there not very good but it’s a good carb

You know, after running about 5 minutes the choke should be open. And stay that way. It sounds like you need to adjust the choke and start from there.
